When it comes to reading food labels, my rule is if I can't say it I don't want to eat it! So much of the food we eat is green harvested, then gassed to ripen, filled with growth hormones or has so many preservatives and artificial chemical ingredients in it you wonder if it is really food or a science project. Start saying NO to chemically enhanced food and YES to high quality organic food.

My favorite organic dairy products, with no antibiotics or growth hormones added, are Horizon Organic, Organic Valley Farms, and Stonyfield Farms. These can be found in your local grocery stores or health food stores. I was raised on a dairy farm and nothing is finer than fresh, unadulterated milk and churned butter. When we first tried Horizon Organic milk, those memories of my childhood on the dairy farm came rushing back! So do yourself a favor and try organic dairy products. Trust me, you will not be sorry.

Oh my goodness, I found a chocolate lovers delight - Dagoba Organic Chocolate! Dagoba sources cacao from farms in Latin, Central and South America. The company requires that all cacao and ingredients are organic, sustainably grown and of the highest quality. Dagoba Organic Chocolate is rich in antioxidants and other beneficial properties and low in cholesterol. The American Heart Association says that cacao has been associated with decreased diabetes and high blood pressure.

Another scrumptious organic chocolate is Newman's Own Organic Peanut Butter Cups. They come in milk chocolate and dark chocolate. Both are delicious, however, I usually eat the dark chocolate ones because I feel that dark chocolate is better for you.

"You Say Bison, I Say Buffalo"
Have you tried bison yet? John and I have been eating bison instead of beef lately. It is naturally good for you because it is low in calories, cholesterol and saturated fats, but high in protein and iron. We ordered our first bison from High Plains Bison in Golden, Colorado and were well-satisfied with the shipping (packed with dry ice and was still frozen when it arrived in Oklahoma) and we love the taste. We thought it might taste a little like venison, but no it doesn't have a 'game' taste at all! The High Plains bison roam over the wide-open spaces with pure spring water and clean mountain air the way nature intended.

A cooking tip: Don't overcook bison, it is best served medium rare. Bison has a high iron content, so if you overcook it the iron picks up a liver taste. I just sprayed some virgin olive oil on and sprinkled sea salt and cracked peppercorns on the steaks, then cooked them on medium high heat for 5-6 minutes on the first side and 4-5 minutes on the second side. After you cook them let them rest for at least 10 minutes so the juices flow back into the steaks. That's It - Enjoy!
