How Is Your AeroGarden Growing?

About 3 weeks ago I started up two new AeroGardens. One with Salad Greens and the other is a Salsa Garden (cherry tomatoes and jalapeno pepper plants). These are so much fun to watch grow, especially if you have children or grandchildren around to help you marvel at the new growth. We've eaten a few salad greens already and should have tomatoes and peppers in about nine weeks. Can hardly wait!

I want to get another AeroGarden with strawberries for my son and his family. I've always had strawberries in my yard and the grandchildren get so excited when we go to see if there are any ripe ones. However, I have never tried to grow the strawberries inside in my AeroGarden. We all love strawberries so! Thought it would be a good project for the two oldest grandsons who are eleven and nine.

Rounding Up The Bison Critics!

Our research on healthy meats led to a Father's Day party, with me playing backyard chef. Our family as a rule all have an opinion and are honest critics about food. What a great time to experiment with bison burgers and bison franks.

We used our gas grill for the bison and our smoker for some marinated chicken breasts. The cook time on the 1/3 pound burgers was five minutes per side with a hot fire. The bison dogs took only two minutes per side, turning about four times.

Wow, what a hit!

Everyone loved the bison burgers, juicy and flavorful, but some thought the dogs were a bit tough. Everything served was very healthy, including wheat buns, organic spring mix salad greens, fresh tomatoes, and all the other condiments. We all ate outside on the deck, enjoying another beautiful Oklahoma summer evening. Over the years we have had many getogethers with the family, this will be well remembered. We fed twenty people, total time spent preparing, about thirty minutes. High Plains Bison has some wonderful  products. We will reorder.

What A Dinner - Range-Raised Bison Filet Mignon!

What a dinner! Sandy and I just finished one of the best home cooked meals we've had in some time. Bison filet mignon, baked sweet potatoes, organic baby spinach salad, and fresh baked wheat bread was on the menu.

The bison (buffalo) came from High Plains Bison. We are trying several companies that sell Bison, organic range-raised of course, to find the best to recommend to our readers. This evening I grilled the steak five minutes on a very hot fire, turned once, cooked another four minutes, removed from the grill and let rest for five minutes. The meat was very tender and cooked medium rare still very juicy. The only seasoning used was virgin olive oil, sea salt and cracked rainbow peppercorns. The whole meal took only twenty minutes to prepare. The salad was fresh organic baby spinach with sunflower seeds, apples, oranges, avocado, and Italian dressing. Yum!

Every one wants to go out to eat, but staying home we saved $50 on the meal and $15 in gas expense. If any of you have a good recipe for a heart healthy meal, drop us a line.

What's Up Organic World?

Because I'm a gregarious guy, it's easy for me to start conversations with strangers and I love talking about organic choices. Many people are truly interested in eating healthy foods, but they don't know where to find it or what exactly the difference is. Over the years my wife, Sandy, has trained me and my taste buds to enjoy healthy foods. For instance wheat breads - white bread just doesn't taste good to me anymore. Organic milk is a little more expensive but really tastes great. We have pretty much eliminated sugar from our diet. Most food, if prepared properly, does not need a bunch of seasonings to have a great taste. Being a heart patient, salt is no longer welcome in my body, so, I've removed it from my diet. Since changing what I eat, my energy level has increased, I've lost weight, and according to friends and family, I'm looking gooood!

Being on the shady side of 60 and still working twelve to fourteen hour days, nutrition is a big priority. Fast foods are out of the question. All my co-workers know what I'm doing and are starting to try many of my discoveries to help them feel better, and save money too. Eating out every day usually costs six to seven dollars, I spend less than three and get better nutrition. Soup and salad from home, tastes great and stays with you better. Also, sandwiches made with healthy deli meats (antibiotic-free, nitrite-free, and all-natural) make a delicious lunch and are so much better for you than that super-sized burger and fries.

Has anyone tried Bison? We just found a place that sells range-raised bison and have ordered some products from them. Will let you know how that turns out. We want to find more places to buy organic and natural foods, at reasonable prices, share our research with everyone, and have a little fun as well. Give us your input, maybe some other parts of the country have things available that could help us here in Oklahoma.
