What A Dinner - Range-Raised Bison Filet Mignon!

What a dinner! Sandy and I just finished one of the best home cooked meals we've had in some time. Bison filet mignon, baked sweet potatoes, organic baby spinach salad, and fresh baked wheat bread was on the menu.
The bison (buffalo) came from High Plains Bison. We are trying several companies that sell Bison, organic range-raised of course, to find the best to recommend to our readers. This evening I grilled the steak five minutes on a very hot fire, turned once, cooked another four minutes, removed from the grill and let rest for five minutes. The meat was very tender and cooked medium rare still very juicy. The only seasoning used was virgin olive oil, sea salt and cracked rainbow peppercorns. The whole meal took only twenty minutes to prepare. The salad was fresh organic baby spinach with sunflower seeds, apples, oranges, avocado, and Italian dressing. Yum!
Every one wants to go out to eat, but staying home we saved $50 on the meal and $15 in gas expense. If any of you have a good recipe for a heart healthy meal, drop us a line.
